Some are good for heavy infantry, some for archers, some for cavalry. There are many different adjutants and each provides access to two or three formations. Adjustants also allow you to put your soldiers into special formations. Your adjutant is tougher than the regular soldiers and he is a bit more aggressive also. That said, you don't want to be fighting five of them and an enemy general, so don't run too far ahead of your own troops. You can kill them in one or two swings of your weapon. At high levels you may be leading three dozen or more well armored infantry into battle. At level 1 you get a small squad of militia troops.
